Well, here it is! Almost game day and I have nothing planned. I have been so busy with a house full of sick children that I have not had a moment of free time to even put a weekly menu together.
As I try to decided what I'm going to serve I have told myself to keep it simple this year. Every year for Super Bowl Sunday, I always find myself in the kitchen and I miss so much of the game and of all the amazing commercials! Yes, I am one of THOSE people...I watch mostly for the commercial entertainment and maybe some of the halftime show. This year, my menu is going to allow me to be away from the stove and on the sofa next to my hubby!
Every year I always, make wings. This year, I'm going to bake them and also try a new recipe. I found this one on Coleen's Recipe Blog. I'm thinking my husband might really like these so I'll give it a try and let you know what we think!
Stuffed Mushrooms. Now, my husband LOVES these. I pretty much make them whenever something special is going on. This was the first recipe that I used. Over time I have made some changes. First off, I always use small Portabello mushrooms. They are so much meatier in texture. Also, when I remove the stems, I chop them up and sautee them in a little butter and garlic and add them to the bread crumb filling. Another thing that I add is a can of diced clams (without juice). My husband loves the clams! And finally, I go a little crazy with cheese on top at the end - I got the idea from Red Lobster's stuffed mushrooms. You just can't wrong here!
Artichoke Spinach Dip - this is just for me. My family is not a big fan of dips unless it's hummas. This is the recipe I follow however, I like a little more heat in my dip so I do add pepper flakes as well. You can decided how much heat you like - YUMMY!!!!
